Cauliflower (Better than classic) Fried Rice.

This recipe is going to make you forget completely about the classic fried rice. I’m a Chinese food fan so I’ve had quite a few different fried rices and I’ve cooked tons of recipes as well. But this one, OMG I just fell in love with it for two reasons: It’s SOO EASY to make and the taste is UNBELIEVABLE!

It’s one of those recipes that if people don’t know it’s cauliflower instead of rice they’ll finish it up thinking they were eating rice the whole time. So, if you want to impress someone with your healthy cooking skills, this is definitely the way to go.

Recipe

Ingredients:

  • 1 whole cauliflower

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 green onion

  • 3-5 mushrooms

  • 2 celery sticks

  • 1 carrot

  • 1 zucchini

  • 1/4 white onion

  • 2 garlic cloves

  • 3-4 tbsp coconut aminos

  • Salt & pepper

  • Optional: low sodium soy sauce (to taste)

Directions

“Rice” the whole cauliflower and finely chop the rest of the ingredients.

Sauté the cauliflower with olive oil or sesame oil.

Add onion and garlic until they’re translucent. Add celery, carrot, mushrooms and season with salt and pepper. Cook for 3 min.

Add zucchini and bell peppers, Season with coconut aminos and salt & pepper. (If you are also adding soy sauce, add at this point).

If you’ll be serving this with any kind of protein, marinate with coconut aminos and cook on a different pan, then top your fried rice with your choice of protein.

Garnish with green onions and you are all set!
