Vegan Palmito Ceviche

Hello Everyone, happy Saturday!

I think this recipe is the physical description of SUMMER! it’s light, very refreshing, and just the perfect balance between sweet and salty. Plus, it’s so easy to make. once all the veggies are prepped it’ll just take you a couple of minutes to mix everything together!

Recipe

Ingredients:

  • 2 cans of whole palmito

  • 1 mango

  • 1 cucumber

  • 2 celery sticks

  • 1/4 red onion

  • 10 - 15 cherry tomatoes

  • 6-8 mint leaves

  • 1 tbsp chopped cilantro

  • Juice of 3 limes

  • 1 tbsp orange juice

  • Salt and pepper

Directions

Finely dice palmitos, mango, cucumber, celery sticks, red onion and add to a bowl.

Cut the cherry tomatoes and add to the same bowl.

Chop mint leaves and cilantro, add to the bowl and mix.

Add lime and orange juice and mix well.

Add salt and pepper to taste, mix well and you are set!
