Devil's Food Chocolate Cake

I’m so happy to be sharing this recipe with all of you, This is one of my personal favorites and my go-to chocolate cake recipe. I think once you try out this one you will never bake another chocolate cake. It’s so balanced in flavor, moisty, and delicious! Also, you can top it off with anything you like: cream cheese frosting, meringue, mousse…

This recipe yields about one 8 inch cake. In this case I wanted a small cake so I split this recipe in three 6 inch pans and this was the result. Of course, if you want a bigger cake just multiply the recipe by 2 or 3!

Recipe (8 inch cake)

Ingredients:

  • 1 whole egg

  • 6 oz granulated sugar

  • 1.5 oz cocoa powder (dutch process)

  • 1/4 oz baking soda

  • 1 pinch of salt

  • 5.25 oz all purpose flour

  • 3.5 fl oz vegetable oil

  • 3.5 fl oz buttermilk

  • 4 fl oz brewed coffee

Directions:

In a stand alone mixer, whisk eggs and sugar until ribbon stage.

In a bowl, mix all liquid ingredients (buttermilk, oil, coffee)

In another bowl, sift cocoa, flour, baking soda and salt

When eggs + sugar mix is ready, start folding dry ingredients and adding liquid ingredients (small quantity each time) and continue: dry, liquid, dry, liquid… Until everything is inside the egg mixture.

Transfer to a parchment paper lined 8 inch cake pan (oil spray the sides) and bake for 20 - 30 min @350F

Cool and decorate as desired.
