The Best Basil Pesto

Hello Everyone,

Am I the only one who can eat Italian food everyday? I love everything about it! Pesto is a classic Italian and this recipe is so good! This meal was kind of semi-homemade, I did the pesto but the raviolis were store bought. Normally, I prefer to make my own pasta, specially raviolis but I saw this vegan ricotta raviolis (almond based) at whole foods and I was so curious I had to buy them!

This Pesto recipe can be used in all kinds of stuff, a semi- homemade meal like this with any kind of pasta, as a spread on a sandwich or some tapas, as a dressing to your salads, marinade…. possibilities are endless! here goes the recipe :)

Recipe

Ingredients:

  • 2 cups fresh basil ( I bought it the same day, the fresher the better)

  • 1/3 cup pine nuts

  • 1/2 cup Parmesan cheese (fresh, grated)

  • 2-3 garlic cloves

  • 1/2 cup extra virgin olive oil

  • Black pepper

Directions:

Toast pine nuts for 3 min-5 min @ 300 F.

Wash Basil leaves and cut the stem, you just need the leaves.

In a food processor, add basil leaves, toasted pine nuts, Parmesan cheese, garlic and freshly ground black pepper. Mix in low speed and slowly add olive oil in a steady steam. Keep mixing until everything is well incorporated.

Notes:

  • This basil pesto recipe can be made in advance and lasts a couple of days in the fridge.

  • Pine nuts can be changed for almonds or walnuts.
