Peanut Butter & Banana Cookies (VEGAN)

Hello you guys,

I love the spirit of this recipe, yesterday I was talking to you via Instagram stories about how I changed the recipes I had planned for this week to new dishes using just what I had in my fridge and without going shopping until I used all the produce I have. Which is actually one of my tips in the How to: Meal Plan Article .

So, I had these bananas which were very ripe and I needed to use them before they go bad. Of course, I always have tons of almond and peanut butter in my pantry so I figured I would make some Peanut Butter + Banana Cookies and they are really yummy and worth a post about them. Here goes!

Recipe:

Ingredients

  • 1/2 cup almond flour

  • 1 cup oats

  • 1/2 cup chopped pecans

  • 1/2 cup peanut butter

  • 2 ripe bananas

  • 3-5 tbsp monk fruit syrup (maple flavored) or maple syrup, honey or agave.

  • 1/2 tsp baking powder

Directions

Mix bananas, peanut butter and monk fruit syrup or honey.

Mix all dry ingredients.

Slowly add dry ingredients to liquid mix until everything is very well incorporated.

Bake @350 F for 12-15 min
