Chipotle Shrimp Tacos

Hello!

So, I’ve been having mixed feelings about summer 2019 coming to an end with fall so close to us. Don’t get me wrong, I LOVE fall and we will have so much fun with all those delicious fall foods, but lately I’ve been wanting to cook all these dishes that remind me of summer, Mexico and beach. So I made this Chipotle Shrimp Tacos (which are AMAZING btw) I hope you like them!

Recipe

Ingredients:

Cilantro Sauce

  • 1 cup cilantro leaves

  • 150 g nonfat, sugar free Greek yogurt

  • 1 lime (juiced)

  • 1/2 tsp garlic powder

  • 1/2 tsp cumin

  • Salt and pepper

In a food processor or blender, mix all ingredients until a smooth sauce is formed. Check seasoning and adjust as needed.

Cabagge Salad

  • 1/2 cup thinly sliced cabagge

  • 1 lime

  • Salt and pepper

  • 1 tbsp Olive oil

In a small bowl mix all ingredients.

Shrimp Tacos

  • 1/4 onion, chopped

  • 2 garlic cloves

  • 1 Roma tomato, seedless.

  • 1/4 cup chipotle

  • 1 lb devained medium to large shrimp

  • Salt and pepper

  • Corn Tortillas

  • Panela cheese, shredded

Directions

In a skillet, heat up some olive oil and saute onions and garlic until translucent.

Add tomato and season with salt and pepper

Add devained shrimp and chipotle, cook for 3 min (longer if needed)

Check seasoning and adjust as needed.

To build tacos:

Heat corn tortillas and add cabbage salad, shrimp, panela cheese and add drizzle with cilantro sauce.
