Fig Maple Oatmeal

Hello you guys,

Fall is now here and it brought us some of my favorite seasonal ingredients! You will love this recipe, it is perfect for an Autumn morning, delicious, cozy & easy to make. This is one of my personal favorite ways to make oatmeal, and guess what? If you are an early bird and don’t have a lot of time to make breakfast I will also share the overnight version of this delicious recipe. Enjoy :)

Recipe

Ingredients:

  • 1 cup rolled oats

  • 2 cups almond milk (sugar-free)

  • 1 tsp vanilla

  • 1/4 tsp cinnamon

  • 2-3 tbsp maple syrup ( I used monk fruit maple-flavored syrup)

  • 1/4 cup chopped pecans

  • 4-6 figs

Directions

In a saucepan, bring milk to a boil and add rolled oats and vanilla cook for 4-5 min, keep stirring.

When oats are cooked add maple syrup and cinnamon.

Serve with chopped pecans and figs. Enjoy with some coffee.

Overnight Oats Version

Ingredients

  • 1 cup rolled oats

  • 1 almond milk

  • 1 tbsp chia seeds

  • 1/4 tsp cinnamon

  • 1 tsp vanilla

  • 2-3 tbsp maple syrup ( I used monk fruit maple-flavored syrup)

  • 1/4 cup chopped pecans

  • 1-2 tbsp almond butter

Directions

In a bowl, mix all ingredients until well incorporated and refrigerate overnight

Next morning. serve and top with figs or your favorite fruit, granola, almond butter and enjoy!
