Not Your Regular Tabbouleh (Waaay Better)

Another perfect summer salad, I’ve always been a fan of tabbouleh and it’s freshness. I feel like regular tabbouleh is meant to be a side dish, so what I love the most about this modern version is that it can actually be a meal, just top it off with your favorite protein and you are all set!

Recipe

Ingredients:

  • 2 cups cooked quinoa or Israeli cous cous

  • 1/4 cup lime juice

  • 1/4 cup olive oil

  • 1/4 cup chopped parsley

  • 1/4 cup chopped mint

  • 1/4 cup green onion

  • 1/2 cup panela cheese ( or “queso fresco” if you can’t find panela)

  • 1/2 cup cherry tomato

  • Salt & pepper

Directions

In a bowl, mix olive oil, lime juice, parsley, mint, salt and pepper.

Add grains and mix.

Add the rest of the ingredients and mix well.

Adjust flavors, add more salt and pepper if needed.

TIP:

When working with fresh herbs, soak then in an ice bath before you use them, this will enhance their color and make your dish look even more beautiful.
