Vegetarian Lasagna

Hello everyone,

As you know, I have a sweet spot for Italian food. I could eat pasta & pizza every single day of my life. I’ve shared with you different versions of this Italian classic: The Lasagna. Today, I’m sharing my new healthy version favorite: Vegetarian lasagna. I hope you like it.

Recipe:

Marinara Sauce

Ingredients:

  • 1/2 tsp ground black pepper

  • 2 tbsp olive oil

  • 1/2 tsp oregano (optional)

  • 2 Fresh thyme

  • 1 Fresh rosemary

  • 1/4 cup chopped Italian parsley

  • 1 Kilo can Italian peeled tomato

  • 4 tomato (cooked and peeled)

  • 2 garlic cloves

  • 1/4 onion

  • 2 tbsp salt

Directions:

Blend the canned tomato, cooked tomato, garlic, onion, salt,and pepper.

Transfer to a sauce pan, add 2 thyme stems (with leaves) and one rosemary stick, cook at low - medium heat for 40 min.

The sauce should become thicker, once it’s cooked remove thyme and rosemary and add chopped parsley and oregano.

NOTE: you can make this sauce in advance and freeze it.

Vegetarian Lasagna

Makes half a lasagna pan (6 servings)

Ingredients:

  • Marinara Sauce

  • 8 lasagna sheets (cooked, I used whole grain)

  • 1/4 onion

  • 1 carrot

  • 2 celery sticks

  • 1/2 eggplant

  • 1 zucchini or Calabacita squash

  • 1/2 red bell pepper

  • 1/2 green bell pepper

  • 1 tomato, seedless

  • 3 big mushrooms

  • 3 tbsp low fat ricotta cheese

  • Shredded mozzarella cheese

  • Chopped Italian parsley

  • Salt & pepper

  • Fresh mozzarella

Directions:

In a big skillet, saute onion, carrots, celery and garlic until onion is translucent

add mushrooms until cooked. Season with salt and pepper.

Add the rest of the vegetables and continue to cook, season with salt and pepper again.

When cooked, add around 5 tbsp of marinara sauce, stir and cook for 2 min. If needed, add more sauce.

Turn the heat off and stir in ricotta cheese.

To build lasagna:

Start with a layer of lasagna sheets, cover with sauce, then add the vegetable mixture and finally add shredded mozzarella cheese. Repeat this step as needed. On the last layer, add lasagna sheets & cover with sauce, but this time don’t add vegetable mixture, just finish with more shredded cheese, fresh mozzarella cheese and Italian parsley.
