Tortellini Salad

Hello!

I present to you a definite new favorite at home. I was in the mood for a pasta salad and came across some almond cheese tortellini in the supermarket. In less than 15 min I whipped up this salad with super simple ingredients that I always have at home and the result was amazing.

I am enjoying every last bit of my “summer salads” while summer’s still here. When the fall gets closer we will be moving on to new seasonal ingredients & start cooking some broths, soups, and more comfy food!

Recipe

Ingredients:

  • 1 9oz Tortellini pack

  • 1 cup spinach

  • 1 cup arugula

  • 1 red bell pepper

  • 1/2 cup cherry tomato, halved

  • 1/4 cup fresh mozzarella mini balls

  • 1/4 cup prosciutto

  • Shredded Parmesan Cheese

Vinaigrette

  • 1/4 cup Balsamic Vinegar

  • 3/4 Extra Virgin Olive Oil

  • 1/2 tbsp old style whole grain mustard

  • 1/2 tbsp honey

  • 2 tbsp water (optional, to thin out)

Directions:

Cook Tortellini in about 4 quarts of water for 2 - 4 min. Then drain, let cool.

In a bowl, mix spinach, arugula, bell pepper, cherry tomato, mozzarella and prosciutto. When tortellini is cold, add and mix.

In a small bowl, mix all vinaigrette ingredients and whisk until incorporated. Optional to add a little bit of water to thin out since the whole grain mustard acts as a thickener.

Serve and garnish with shredded Parmesan cheese.
