Pecan + Almond Cookie Balls

Hello you guys!

I hope you are having an amazing #cookieweek. This recipe is very special for me. My Grandmother used to make them every year for the holidays so it brings back a lot of good memories, sitting around with my family having lots and lots of these little bites of heaven. They are DELICIOUS and I love making them around this time of the year because I feel like they are just the perfect representation of a white Christmas. Hope you enjoy!

Recipe

Ingredients

  • 2 sticks of butter

  • 2 cups of flour

  • 4 tbsp powdered sugar + more for dusting

  • 1/2 cup pecans, chopped

  • 1/2 cup almonds, chopped

  • 2 tsp baking powder

  • 1 tsp vanilla

  • pinch of salt

Directions

  • Preheat oven 350 F

  • sift flour, baking powder and salt.

  • Using a hand mixer o a stand alone mixer, cream butter and add powdered sugar.

  • Slowly add sifted flour mixture and vanilla.

  • When your mixture looks like a thick dough, stir in pecans and almonds.

  • Prepare a baking sheet pan with parchment paper or silicone mat.

  • Form small dough balls, take in consideration that because this recipe has baking powder they will become bigger once they are baked.

  • Bake for 15 min

  • Once they are baked and still hot, roll each cookie in powdered sugar.

  • Let them cool and enjoy!
