Healthy Chocolate Cake / Wafer Paper decor.

So I know this image doesn’t exactly say chocolate cake but look how beautiful this colors and layers are! well, underneath all this beauty there’s a delicious + healthy chocolate cake!

here’s the recipe:

Ingredients

  • 1 egg

  • 8 oz monk fruit sugar replacement

  • 1.5 oz cocoa powder

  • 0.25 oz baking soda

  • 0.25 oz salt

  • 5.25 oz whole wheat flour

  • 3.5 oz Greek yogurt

  • 4 oz applesauce

  • 4 oz brewed coffee

Coconut cream whipped ganache

  • 1 can (13.5 oz) coconut cream

  • 5 oz dark chocolate

Directions

  • Preheat the oven at 350 F

  • Prep your cake pans with butter and flour or parchment paper

  • in a stand-alone mixer or with a hand mixer, whisk egg + monk fruit until ribbon stage.

  • In a bowl, mix and sift all dry ingredients

  • In another bowl mix all liquid ingredients.

  • Slowly add dry and liquid ingredients to the egg mixture. add liquid, add dry, add liquid, add dry until everything is incorporated into a smooth batter.

  • Bake at 350 for 25-35 min.

  • While your cake is baking, place the dark chocolate in a bowl, in a saucepan bring the coconut cream to a boil and pour over the dark chocolate. Mix well, use the whisk if necessary and make sure you have a smooth ganache with no chocolate lumps. Refrigerate overnight.

  • Cool cakes and wrap in plastic overnight.

  • Once your ganache has rested at least 8 hrs, whisk for a fluffy finish and build your healthy cake!

Notes: Because this cake is avoiding ingredients like butter, buttermilk or oil if it’s served without the creamy ganache it might feel a little bit dry, together they make a beautiful healthy cake.
