Healthy Chocolate-Banana Bread Muffins

Hello hello,

Last night I had a ton of ripe bananas leftover from the past week and I decided to say goodbye to Summer 2020 with these amazing muffins! They are very easy to make, incredibly delicious and completely guilt free.

This recipe yields 18 muffins

Here’s what you’ll need:

Equipment:

  • 1 big bowl

  • 2 medium-sized bowls

  • 1 muffin pan

  • Muffin sleeves/cups

  • Whisk

  • Spoons

Ingredients:

  • 4 medium sized ripe bananas

  • 1/4 cup Greek yogurt

  • 1/4 cup applesauce

  • 1/4 cup avocado oil

  • 1 1/2 tsp vanilla extract

  • 2 eggs

  • 1/2 cup monk fruit (sugar)

  • 1/2 cup coconut palm sugar

  • 1 1/2 cup whole wheat flour

  • 3/4 cup cocoa powder (dutch processed)

  • 1 1/2 tsp baking soda

  • 1 tsp salt

  • Dark chocolate chips or chocolate chunks

Directions:

  • Preheat the oven @ 350 F

  • In a big bowl, mash the bananas and add Greek yogurt, applesauce, avocado oil, and vanilla extract. Mix until everything is well incorporated.

  • In a medium-sized bowl, whisk together the eggs and the sugars until fluffy.

  • Add the egg and sugar mixture to the bowl with the mashed bananas mixture, mix until well incorporated.

  • In another bowl, mix all the dry ingredients (whole wheat flour, cocoa powder, baking soda, salt) and sift.

  • Slowly incorporate sifted dry ingredients to liquid ingredient mixture.

  • Finally, add chocolate chips or chocolate chunks to the batter.

  • Prep the muffin pan with the muffin sleeves and transfer the batter to the pan.

  • Fill each muffin sleeve to 3/4 full

  • Bake at @350 F for 20 min or until they pass the toothpick test.

  • Enjoy!
