HEALTHY Carrot Cake Cupcakes

I hope you are doing great, I’ve always loved Carrot Cake and recently, one of my online classes students asked if she could learn a healthy version of my carrot cake cupcakes. So, after testing I came up with this recipe which I can honestly say. IT MIGHT BE EVEN BETTER THAN THE ORIGINAL ONE! these cupcakes are SO GOOD, you really won’t believe they are a healthy alternative to the real thing. I hope you guys enjoy this recipe and I’ve shared 2 frosting options that will go beautifully with this cupcakes.

Cupcake Recipe

Ingredients

  • 2 eggs

  • 1/3 cup monk fruit (sugar)

  • 1/3 cup coconut sugar

  • 1 cup all-purpose flour

  • 1 cup almond flour

  • 1 tsp baking soda

  • 1 tbsp baking powder

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/3 cup applesauce

  • 1/4 cup Greek yogurt

  • 1/2 cup almond milk

  • 1/4 cup avocado oil

  • 1/2 tbsp vanilla extract

  • 1 1/2 cups shredded carrots

  • 1 cup chopped pecans

Directions

  • Preheat oven at 350 F

  • In a bowl, mix all dry ingredients (excluding sugars) and sift

  • In another bowl, mix all liquid ingredients

  • In a third bowl, (make sure it’s a big one) whisk monk fruit and coconut sugar with eggs until sugars are well dissolved.

  • Slowly add dry and liquid ingredients to egg + sugar mixture (I like to add them in three times) until everything is well combined.

  • Fill your cupcake molds (with the paper cups) until 1/2 - 3/4 full

  • Bake at 350 F for about 20 -25 min.

Frosting Options:

Option 1

  • 1/4 cup greek yogurt

  • 2-4 tbsp maple-flavored monk fruit

  • 1/4 tsp vanilla extract

  • optional: cinnamon

Directions

In a bowl, mix all ingredients and add right before serving to each cupcake. I mention this because this frosting’s texture is kind of like a glaze. So, it will usually be a little bit runny and once it’s been sitting in the cupcake for a while it’ll start looking funny. So, my recommendation if you are going for this healthy option is to keep the frosting in a bowl and frost each cupcake before eating :)

Option 2

  • 1 cream cheese bar

  • 1 butter stick

  • 1 - 2 cups of powdered sugar (depending on how sweet you want it)

  • 1 tsp vanilla

Directions

In a mixer, using the paddle attachment, cream the butter until it’s very smooth. Then, add the cream cheese and mix again. Finally, add the powdered sugar. This frosting will have a very good consistency, you can pipe it ad decorate your cupcakes as you wish!
