Healthy Brownies

Hello you guys!

OMG!

They are finally here.

For months I tested and tested different techniques, ingredients, methods and I just couldn’t find the perfect healthy brownie. UNTIL NOW! I’m so happy to finally share this recipe with you, I hope you like it!

* I used a 9 x 6 baking dish

Ingredients:

  • 1/2 baking dark chocolate bar 60% (I used half of a 113.5g bar)

  • 1/4 cup coconut oil

  • 1/2 cup coconut sugar

  • 2 yolks

  • 1/4 cup Greek yogurt

  • 1/3 cup whole wheat flour

  • 1 1/2 tbsp cocoa powder

  • pinch of salt

  • 2 egg whites

  • 1/2 cup brown sugar

  • Chopped pecans (opcional)

  • Dark chocolate chips (opcional)

Directions

In a bowl, mix dark chocolate, coconut oil and coconut sugar. Melt over a double boiler

When the chocolate is completely melted, add yolks and whisk until incorporated

Then, add Greek yogurt and whisk again until your batter looks incorporated and very smooth

In another bowl, mix whole wheat flour, cocoa, and salt

Add dry ingredients to the chocolate mixture and mix very well

In a stand-alone mixer, mix your egg whites in high speed, when they are foamy are one-third of the brown sugar, mix for a minute and add another third, mix for a minute and add remaining brown sugar

Whisk until you have a soft peak meringue

Gently add your meringue to your melted chocolate mixture and fold

Transfer to a parchment paper-lined baking dish ( I used a 9 x 6 ) and decorate with pecans and chocolate chips

Bake at 300 F for 25-30 min or until toothpick test comes out clean with just a few crumbles

Wait until they are cold and cut
