Christmas Sugar Cookies

Hello you guys!

I hope you are doing great. This is #cookieweek Day 7! so we say goodbye (for now) to cookie week with these amazing holiday cookies. I had SO much fun during this week, I ate more cookies than ever and I’ve gotta say, every single bite was worth it! I hope you guys had fun as well and enjoyed all these new cookie recipes!

Recipe

Ingredients

  • 2 cups of flour

  • 2 sticks of butter

  • 3/4 cup sugar

  • 1 egg

  • 1 tsp vanilla extract or almond extract

  • 2 pinch of salt

  • 1 tbsp milk ( I used almond milk)

Royal Icing

  • 2.5 cups powdered sugar

  • 1/4 cup egg whites

  • 1 tsp vanilla extract

    • Using a hand mixer o a stand-alone mixer with the paddle attachment. mix all your ingredients until well combined. This is a very forgiving recipe and it can be adjusted to your needs, for the cookies you will need it to be slightly thick so if needed, add more powdered sugar to thicken or more egg whites to thin it out.

Other equipment:

  • Gel Food Coloring

  • Pastry bags

  • Pastry tips

  • Sprinkles

Directions

Using a hand mixer or a stand-alone mixer, cream butter and sugar until creamy and fluffy. Then, add the egg and vanilla/almond extract.

In a bowl, sift flour and salt.

Your butter mixture should look homogenous before continuing to the next step.

Add milk.

Slowly add dry ingredients to butter mixture and mix until combined.

Wrap your mixture in plastic and chill in the fridge for 1.5 hrs.

Meanwhile, prepare your royal icing. To color: separate in small bowls and add gel food coloring of the desired color. You will also need to have your pastry bags and pastry tips ready.

Once it’s chilled, roll your dough and using cookie cutters cut the desired shape. Chill again in the fridge for at least 20 min.

Bake at 350 F for 12-18 min, or until the edges turn slightly golden brown but the top is still clear.

Once your cookies are baked, wait for them to get to room temperature and you can start decorating.

To decorate:

  1. Using a pastry bag and a small round tip, outline the edge of your cookie with royal icing and wait for it to dry.

  2. Once the outline is cool, fill the center.

  3. If you have third layers, wait for the filling to dry and add the next layers.

  4. Add sprinkles before it dries.
